i have two bowls of this in my fridge now and not sure what to do (other than stir fry but even then not too sure on the how).

can you make a rice pudding with cold cooked rice?

Tuna Rice Bake

Melt 2 TBS butter in saucepan, add 1 crushed clove of garlic, 1 sliced onion and 2 stalks celery sliced( we subsitiute frozen mixed vege). Cook for 5 min til onion soft.
Add 1 TBS flour and stir for 2 mins. Remove from heat.
Gradually add 1 cup milk, stiring constantly.
Return to heat and stir until sauce thickens and comes to the boil. Remove from heat.
Add 2 eggs and 3/4 cup grated cheese. Mix well. Stir in cooked rice (3/4cup raw rice-dunno how much that is cooked sorry- about 2 cups I think), 2 TBS chopped parsley, and a 425gcan tuna (drained and flaked). Season.
Put in greased dish, top with cheese (or bread crumbs). Bake at 180degrees for 20mins. Serve hot or cold.

Very yum and great the next day too!

Or fried rice. My mum always cooks extra rice and leaves it to cool in fridge overnight and we have fried rice the next night for tea. She modifies the recipe in the edmonds cook book.

i couldnt find the one in the edmonds...i rang my mum instead and did fried rice for tea tonight.

I made the tuna rice bake last night. Very quick and easy and super yummy!! Nice and easy to change things too. I put capsicums, courgettes and leek in it instead of celery and it was really good. Thanks for the recipe Kellz

Also good with salmon and I make a basic cheese sauce and mix it in instead if running late.
