Easy and relatively healthy.<br /><br />TBH I don't find it too hard just sticking a casserole on - as we get leftovers, so I freeze the extra portions (Dh's 1 portion!) and that's usually enough for myself and the kids for lunch another day. I've been on my own until recently and would only cook half the week, just in double doses. I'd have enough in my freezer to rotate different meals each night but with half the cooking. Easy peasy :)]]>

We love cornfritters too! You could also do breadcases with whatever filling inside (just like muffins but you put the bread in the muffin tray and fill the inside and top with cheese (if you wish)). Or stuffed potatoes!]]>
