While that seems to be staying safe going with what is tested, I usually add my own signature on it by adding chocolate chips and some other stuff that others might find odd.  Have you tried a muffin with sea salt, I think I could pull that off convincingly.]]>

I think it's an Edmonds one:<br /><br />50g butter<br />3/4 cup milk<br />1 egg<br />1 1/2cups plain flour<br />1 1/2 tsp baking powder<br />1/4 tsp salt<br />3/4 cup grated cheese<br /><br />*Heat milk and butter until butter has melted<br />*When cool whisk in egg (doesn't really have to be cool, just not really hot)<br />*Sift flour, baking powder and salt over liquid ingredients and add cheese (or just dump it all in like I do <img border="0" src="https://www.ohbaby.co.nz/forum/smileys/smiley2.gif" border="0">)<br />*Stir all ingredients until just combined<br />*Spoon into greased muffin tins<br />*Sprinkle some grated cheese on top<br />*Bake @200 deg/c for 10-12 mins<br />*Let cool for 5 mins before turning onto a wire rack<br />Makes 10-12 regular size muffins, or heaps of little ones. They freeze well too.<br /><br />You can add bacon, feta, capsicum, parsley - basically anything to these. I make them in a Pyrex jug and can have them ready to eat within 1/2hr.<span style="font-size:10px"><br /><br />Edited by clobug</span>]]>

It makes 12 texan size muffins (huge!) and you just add whatever combination you feel like on the day.<br /><br />The recipe is<br /><br />3 Cups Flour<br />3 tsp baking powder<br />1/2 tsp salt<br />1 cup sugar<br />2 eggs<br />1/2 cup oil<br />1 cup milk<br />1 cup fruit of your choice <br /><br />Preheat oven to 180 or 160 fanbake.<br />Place all ingredients in a large bowl.<br />Mix all liquid ingredients together and whisk till well combined.<br />Mix liquid into dry ingredients and stir until only just combined.<br /><br />Bake 15-20 min or until cooked.<br /><br />Some of our favourite combinations here are:<br /><br />Banana & Chocolate Chip<br />Cinnamon, Peach and white chocolate<br />Chocolate with caramello pieces<br />Raspberry and white chocolate<br /><br />These are so delicous and easy peasy to make :)]]>

Preheat oven to 180. I find normal bake not fan to be better in my oven but you can experiment <br /><br />2. Sift flour, baking powder, sugar and salt into a big bowl and put aside<br /><br />3. Put milk, oil, soda and egg into a big jug and whisk together until well mixed <br /><br />4. Add mashed banana<br /><br />5. Add to the flour mixture and stir until just mixed <br /><br />6. Fill muffin pans until almost full. Bake 15-20 mins or until risen and golden brown <br /><br />These muffins taste great, are so cheap to make with what you have in the cupboard and no butter and not too much sugar :) <br /><br />To jazz them up you can also add chocolate chips. <br /><br /><br />I am also on the hunt for other healthy-ish muffin recipes :) Please share anyone]]>
