Author: Faffer
Subject: 36822
Posted: 24 November 2010 at 12:21pm

I make stuffed artichokes sometimes - got the recipe from one of the newspaper liftouts a few years ago. From memory:

Ingredients:
6 large artichokes
6 cups fresh breadcrumbs
1 head of garlic (peeled)
Big bunch of parsley
Sea Salt
Freshly ground black pepper
Extra virgin olive oil

Method:
Chop artichoke stalks off close to base so they sit flat. Trim tips of outer leaves so they look nice.
Rougly blend breadcrumbs, garlic, parsley, salt and pepper in a blender (may have to do in a few batches).
Stuff the breadcrumb mix down between as many of the artichoke leaves as you can get to (you won't be able to reach inside ones). When you're finished the artichoke ends up with its leaves all pushed out with the stuffing.
Put artichokes on a roasting tray and drizzle generously with olive oil. Place in a 180C preheated oven for an hour (or maybe a bit more until you can push a skewer through the base easily). Baste with olive oil regularly.

I was inspired back in the day and forked out $2 each for about 5 and my family all gave me crazy looks and hid them under the other veges on the side of the plate. 50c is an awesome price.

You pluck the leaves one by one and dip the fat end in the butter, then scrape it away with your teeth. Thats really hard to describe. Um, when you pull the leaf out there will be a fleshy bit at the bottom - thats the part you eat. Then discard the rest of the leaf. Keep going until you reach the centre. Thats the moist, tender, expensive part. Then you will encounter the "choke" which is a hard hairy bit, don't eat that. Throw it away.

They look massive but not that much food on them sadly. 50c each is really good though, they're normally wickedly expensive!

They's fancy food
